dinner in a hurry...

marinated some shrimp in mango apricot juice. pan seared them with loads of garlic, green onions and red pepper flakes. next time will add ginger and use cilantro instead of green onion.

took leftover juice marinade, reduced it down with some coconut flakes and poured it over brown jasmin rice for dessert.

so full.

ok... yum!!! everytime they talk about "reduction" in a dish on top chef, i always wondered what that was!!
